Sky-High Flavour: A Rooftop Celebration of Argentinian Cuisine at Open Aera
On July 29, guests gathered atop The Well at Aera’s 39th-floor rooftop patio for a one-night-only celebration of Argentinian cuisine, wine, and culture. Hosted by O&B Corporate Executive Chef Anthony Walsh and Aera Executive Chef Binit Pandey, the intimate five-course dinner drew inspiration from Argentina’s rich grilling traditions and bold, rustic flavours.
The evening began with a selection of traditional empanadas and signature cocktails, followed by a refined progression of dishes, from red shrimp tortilla with caviar cream to canneloni with sweetbreads and brown butter escabeche. At the heart of the meal was a showstopping asado featuring premium Argentine beef from The Butcher Shoppe, served with charcoal-grilled vegetables.
Each course was thoughtfully paired with wines from Zuccardi Valle de Uco, one of Argentina’s most celebrated wineries. Selections included a vibrant Sémillon, a Polígonos Malbec, and a José Zuccardi Malbec–Cabernet Sauvignon blend.
Set against sweeping views of the Toronto skyline and a vibrant, communal atmosphere, the evening captured the lively spirit and rich culinary heritage of Argentina.
